Her marinade of olive oil, lemon juice, white wine, garlic and fresh oregano serves up a grilled lamb chop that is juicy and tender every time. The colorful Greek salad she serves with the meal is popping with flavor and has everything in it, teardrop tomatoes, artichokes, romaine and iceberg lettuce, Kalamata olives, red onion, cucumber, mushrooms, hard boiled eggs and feta cheese, almost a meal in itself. One of Kris' signature pasta dishes is her ROASTED RED PEPPER PASTA. First she roasts the red peppers and marinates them in oil and garlic, then she roasts up sweet onions. Now it is time for the sauce. Start off with a little oil and garlic and add a few red pepper flakes and a little white wine, a little chicken broth and cook slowly. Since she discovered Tilapia she has created many different recipes for it. TILAPIA SICILIAN is a perfect example of how elegantly this fish can be prepared. Start off with a good, pure olive oil and some unsalted butter and saute the Tilapia for 2 minutes on each side. Remove the fish from the pan to a warm platter then it is time for the EASY sauce. Add the onions and garlic and let it simmer. Some dry white wine and some thinly sliced pieces of lemon go right into the pan.
