Parmigiane – Cheese Casseroles
The zucchini and eggplant are ripe for the picking in Guy's Garden, and Mary Ann has her harvest basket ready. These plump perennial favorites are perfect for the two casseroles she prepares nella cucina. The Zucchini Casserole has a hearty ragu with mozzarella cheese, and the Eggplant Casserole is layered with tomato sauce and Parmigiano Reggiano cheese, and is served as a cold antipasto. Bravissma!
